What Do They Eat? - Parsley Dip

Aaron is what many would call "the salt of the Earth".  He's a friendly, hard working, genuine, all around great guy.  He works in NYC, in the photo business, selling collections of music photography at the Morrison Hotel Gallery.  Since he's always on the go, most days he forgets to eat lunch.  When Aaron does get around to eating he wants something super quick, no fuss.  His "go to" is what I call parsley dip but it is multi-functional;  it can be used as a topping for vegetables or a condiment for a sandwich.



Aaron's favorite way to eat this concoction of parsley, garlic, olive oil is by spooning it on top of toasted pita bread. This dip was inspired by a meal at Greek restaurant in Astoria, Queens.  Unfortunately, Aaron only had the pleasure of dining there once before they closed but the memory and the parsley dip live on in Brooklyn.

The terrific health benefits of eating this vibrant green herb are:

  • Parsley packs a punch of antioxidants, specifically in the form of vitamins A & C which strengthen your body's immune system.
  • The vitamin C as well as the luteolin promote carbohydrate metabolism and serve as an anti-inflammatory aid.
  •  Parsley also is a good source of folic acid which is vitally important for cardiovascular health and cancer prevention.


PARSLEY DIP                                                   makes 1 cup

INGREDIENTS:
1 large bunch of flat leaf parsley, chopped (yields about 1 cup)
1 Tbsp fresh lemon juice
1/2 tsp fresh garlic, minced
1 1/2 tsp shallot, minced
4 Tbsp olive oil
salt an pepper to taste (we put a couple pinches of each)

DIRECTIONS:
1.  Rinse parsley thoroughly in a colander and then pat dry
2.  Pinch parsley leaves off of the stems then discard the stems
3.  Chop parsley until it is fine, place in a small bowl and set aside
4.  Mince garlic and shallot then add to the chopped parsley
5.  Juice half of a lemon, remove the seeds and add a tablespoon to the parsley mixture
6.  Add 4 tablespoons of olive oil, a few pinches of salt and pepper then mix well
Break out the pita and you have yourself a healthy appetizer!

NOTE:  You can also throw all the ingredients into a food processor and make this in minutes.  Just be sure not to over process!
