What Do They Eat? - Green "Esmerelda" Smoothies

Once in a while you take a vacation to a place that you don't ever want to leave.  It's the perfect temperature, the food is delicious, the landscape is colorful and the people shine from the inside out.  Sayulita, Mexico has my heart right now.  I could have easily stayed in this small fishing village for another couple of weeks or until the end of winter...  
Sayulita is truly a magical place.  It's no wonder that the lovely Canadian couple, Patrick Garramone and Vanessa Juliet, have chosen to return for another season in this surfing hot spot to run the morning shift at Tacos on the Street.  We discovered Sandrita's en la Manana at Tacos on the Street (on the corner of Rodriguez and Av. Revolucion) on our first day when my boyfriend and I were out to find the perfect fish taco (we had many!).  FYI, Tacos on the Street does not serve tacos until the evening but in the morning from 9am to 3pm it's Sandrita's en la Manana and they serve the best smoothies, juices, organic coffee drinks, homemade muffins and vegan loaves in town.  Sandrita makes all the baked goods and Vanessa and Patrick were instrumental in creating the selection of mouth-watering smoothies.  They have fun names like, Poncho, Valentina, and Gaudalupe to match their different characteristics.  My favorite is the Esmerelda and it is fittingly green in color. 


When I told Vanessa that the Esmerelda had my heart and taste buds she agreed that it has hers too.  Here's what Vanessa had to say about creating her favorite smoothie, "It came together pretty naturally actually.  I knew I wanted a smoothie that had all the great properties of "green" drinks, but with the freshness and sweetness of a tropical smoothie that you can drink everyday. I was also motivated as a vegetarian and wanted a smoothie that would include iron and protein, and also taste awesome. I feel like the ginger brings it all together, it complements the leafy spinach flavor and brings out the sweetness of the apple and pineapple. Yum! I drink it everyday... at least once."

It's the beginning of a new year and I know there are plenty of "get in shape", "detox for the new year" smoothies and juice concoctions out there but I think you'll find this one a keeper in your arsenal.  If you find you are tiring of hot cereal this winter then juice in and chill out with an Esmerelda in the comfort of your cozy home.

ESMERELDA                 makes one 16 ounce smoothie

INGREDIENTS:
1/2 cup fresh or frozen pineapple, cut into chunks
2 cups organic spinach, washed
1/2 medium apple peeled, cored and sliced
1/2 tsp freshly grated ginger root
1 Tbsp coconut cream
1/2 cup freshly squeezed orange juice
2 Tbsp slivered almonds
1/2 tsp spirulina (optional)
2 -3 cubes of ice

DIRECTIONS:
1.  Add all your ingredients into a high speed blender container and blend until you have a smooth consistency
2.  Pour into a large glass and sip away!
